Today’s recipe is about New York Cheesecake, the classic one with no short cut and tips to get no-crack cheesecake Let’s see how to the kitchen These all the ingredients for a classic New York cheesecake For crust : 2 packs of graham crackers, grind finely and 4 Tbsp melted butter Vanilla 4 x @8oz cream cheese, any brand I’m using springform pan dia. 9″ 1 1/2 C sugar, 3/4 C milk and 4 Tbsp melted butter for crust all-purpose flour 1/4 C To make this cheesecake is easy I don’t want any crack on top of my cheesecake So, when bake cheesecake batter, use the technique called “bain-marie” you fill a bigger pan with water , preheat with the oven And when you bake a cheesecake, when you see the cheesecake firm around the edge but still jiggling in the middle, it’s done Turn off the oven and leave the cheesecake inside the oven to cool down and set Now, I’ll grind graham crackers in a food processor and mix with melted butter This is finely ground graham crackers and mix with melted butter. Press onto the pan using the bottom of glass Set aside While you mix the cheesecake batter preheat the oven 350 F with this bigger pan filled with water (not too much)inside the oven These all the cheesecake ingredients, I repeat again 4 x @8oz cream cheese, any brand 3/4 C milk, 1 C sour cream Vanilla and 4 eggs 1 1/2 C sugar and 1/4 C all-purpose flour Beat cream cheese and sugar until fluffy but not overmix Add eggs one by one Cream cheese and sugar Start to beat cream cheese and sugar Fluffy like this, now add eggs one by one Vanilla and milk, beat very carefully. The milk will splash 1 C sour cream Beat again, just until mix in Done, now, I’ll pour into the prepared pan Add the flour into the batter, stir well Prepared pan, I covered with aluminum foil just in case if the batter leak Ready to bake in the oven for at least 1 hour but no more than 1 1/2 hours. It depends on your oven The alarm off, meaning 1 hour Set on the edge and still a bit jiggling in the middle Let it cool down inside the oven, the oven is turn off This is done but still warm, I won’t cut this until the next day. I’ll keep in refrigerator The final result, the cheesecake cold enough. I kept in refrigerator.
